About Hocho Insight


Hocho Insight is written from Japan, where a well-made kitchen knife — a hocho — is not an exotic import. It is what the neighborhood hardware store sharpens, what the fishmonger uses all day, and what generations of smiths in towns like Sakai and Seki have made their living forging. That changes how you see the "Japanese knives" sold overseas: some are superb, some are honest tools with inflated stories, and some are ordinary stainless with a kanji laser-etched on the blade.

This site exists to sort one from the other, in plain English, for people buying Japanese kitchen knives outside Japan.

How we review

  • We focus on what you can verify. Steel type, construction, grind, and maker — the things printed on the spec sheet and visible in the product photos — not marketing mythology about ancient sword-smithing secrets.
  • Living in Japan is our reference point. We compare what overseas retailers charge against what the same class of knife costs from a shop in Sakai, Seki, or Tsubame.
  • We name the downsides. Every recommendation includes who it is notfor. Carbon steel that rusts in a dishwasher household is a bad knife for that kitchen, no matter how beautifully it cuts.
